June 21, 2012. San Jose, California. Getting baby-ready veggies into Hazel's diet takes more work than fruits and grains. I've been experimenting with baked vegetables; these two were a big hit with both the baby and the hubby--Sweet Potato Fries and Baked Zucchini.
It's rather simple, to make the Sweet Potato Fries I first peel the sweet potatoes, then slice them into thin strips, toss them with a little olive oil, salt,and pepper, spread out on a baking sheet, then bake for 10-12 minutes at 425.
The recipe for Baked Zucchini is similar. After washing the zucchini I cut into medallions (without peeling). Then toss with olive oil, salt, pepper, and parmesan cheese (optional). Spread veggies on a cookie sheet and bake for 10-12 minutes at 425.
A good mixed veggie combo is the zucchini with slivered baby carrots and skinny green beans...sliced and tossed then baked the same as the zucchini. Yumm.
